Keto Pizza Chaffle

Ingredients:
- 1 large egg
- ½ cup shredded mozzarella cheese
- 1 tbsp almond flour (for better texture, optional)
- ¼ tsp baking powder (optional, for fluffiness)
- ¼ tsp Italian seasoning
- 1 tbsp grated Parmesan cheese
For Topping:
- 1 tbsp sugar-free pizza sauce
- ¼ cup shredded mozzarella cheese
- 4-5 pepperoni slices (or any keto-friendly toppings)
Instructions:
- Preheat your mini waffle maker and grease it lightly.
- Mix egg, mozzarella, almond flour, baking powder, Italian seasoning, and Parmesan cheese in a bowl.
- Cook the Chaffle: Pour half the batter into the waffle maker, close the lid, and cook for 3-4 minutes until golden brown. Repeat for the second chaffle.
- Assemble the Pizza: Spread pizza sauce on top, sprinkle mozzarella cheese, and add pepperoni.
- Melt & Serve: Either microwave for 30 seconds or broil in the oven for a minute until the cheese melts.
