Keto Pizza Chaffle

Ingredients:

  • 1 large egg
  • ½ cup shredded mozzarella cheese
  • 1 tbsp almond flour (for better texture, optional)
  • ¼ tsp baking powder (optional, for fluffiness)
  • ¼ tsp Italian seasoning
  • 1 tbsp grated Parmesan cheese

For Topping:

  • 1 tbsp sugar-free pizza sauce
  • ¼ cup shredded mozzarella cheese
  • 4-5 pepperoni slices (or any keto-friendly toppings)

Instructions:

  1. Preheat your mini waffle maker and grease it lightly.
  2. Mix egg, mozzarella, almond flour, baking powder, Italian seasoning, and Parmesan cheese in a bowl.
  3. Cook the Chaffle: Pour half the batter into the waffle maker, close the lid, and cook for 3-4 minutes until golden brown. Repeat for the second chaffle.
  4. Assemble the Pizza: Spread pizza sauce on top, sprinkle mozzarella cheese, and add pepperoni.
  5. Melt & Serve: Either microwave for 30 seconds or broil in the oven for a minute until the cheese melts.
