Southern Fried Salmon Patties
Ingredients
- 2 cans (14.75 oz each) pink salmon (or 1 lb fresh, cooked and flaked salmon)
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper (optional)
- 2 large eggs
- 1/2 cup breadcrumbs (or almond flour for keto version)
- 1/4 cup mayonnaise
- 1 tablespoon mustard (Dijon or yellow)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional, for a little heat)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh parsley (optional, for garnish)
- Oil for frying (vegetable, canola, or avocado oil)
Instructions
- Prepare the Salmon
If using canned salmon, drain it well and remove any large bones and skin. Flake the salmon into a large bowl. - Mix the Ingredients
Add the finely chopped onion, bell pepper (if using), eggs, breadcrumbs or almond flour, mayonnaise, mustard, garlic powder, cayenne pepper, salt, and black pepper to the bowl with the salmon. Add lemon juice for freshness. Mix thoroughly until well combined. - Shape the Patties
Form the mixture into small, round patties about 3 inches wide and 1/2 inch thick. You should get 6-8 patties, depending on size. - Heat the Oil
Heat about 1/4 inch of oil in a large skillet over medium heat until it shimmers but does not smoke. - Fry the Patties
Place the patties gently in the hot oil without overcrowding the pan. Fry for 3-4 minutes on each side or until golden brown and crispy. Adjust heat as necessary to avoid burning. - Drain and Serve
Remove the cooked patties and place them on a plate lined with paper towels to drain excess oil. Sprinkle with fresh parsley, if desired. - Serving Suggestions
Serve warm with tartar sauce, remoulade, or a side of lemon wedges. Pair with a simple salad or your favorite dipping sauce for a complete meal.
