Chipotle Salmon

Ingredients
- 2 salmon fillets (about 6 oz each)
- 2 tbsp olive oil or melted butter
- 2 tsp chipotle chili powder
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp ground cumin
- Salt and black pepper to taste
- 1 tbsp fresh lime juice (plus extra lime wedges for serving)
- Fresh cilantro (optional, for garnish)
Instructions
- Prepare the Salmon
- Preheat your oven to 400°F (200°C) or heat a grill to medium-high.
- Pat the salmon fillets dry with a paper towel and place them on a baking sheet or a piece of foil if grilling.
- Make the Spice Rub
- In a small bowl, combine chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper.
- Drizzle the salmon fillets with olive oil or melted butter and rub the spice mix evenly over the top of each fillet.
- Bake or Grill the Salmon
- Baking: Place the salmon in the preheated oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork.
- Grilling: Place the salmon skin-side down on the grill and cook for 6-7 minutes per side or until cooked through.
- Add Lime and Garnish
- Drizzle fresh lime juice over the salmon and garnish with chopped cilantro if desired.

Serve with a side of sautéed vegetables, a fresh avocado salad, or cauliflower rice for a complete keto-friendly meal.
