Chipotle Salmon

Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 2 tbsp olive oil or melted butter
  • 2 tsp chipotle chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground cumin
  • Salt and black pepper to taste
  • 1 tbsp fresh lime juice (plus extra lime wedges for serving)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Prepare the Salmon
    • Preheat your oven to 400°F (200°C) or heat a grill to medium-high.
    • Pat the salmon fillets dry with a paper towel and place them on a baking sheet or a piece of foil if grilling.
  2. Make the Spice Rub
    • In a small bowl, combine chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper.
    • Drizzle the salmon fillets with olive oil or melted butter and rub the spice mix evenly over the top of each fillet.
  3. Bake or Grill the Salmon
    • Baking: Place the salmon in the preheated oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork.
    • Grilling: Place the salmon skin-side down on the grill and cook for 6-7 minutes per side or until cooked through.
  4. Add Lime and Garnish
    • Drizzle fresh lime juice over the salmon and garnish with chopped cilantro if desired.

Serving Suggestions

Serve with a side of sautéed vegetables, a fresh avocado salad, or cauliflower rice for a complete keto-friendly meal.

  • Adjust the chipotle chili powder to your spice preference.
  • For extra flavor, marinate the salmon in lime juice and olive oil for 15-20 minutes before applying the spice rub.
