Keto Chicken Cheese Broccoli Casserole
Ingredients:
- 2 cups cooked chicken (shredded or diced)
- 4 cups broccoli florets (steamed or blanched)
- 1 1/2 cups shredded cheddar cheese (or your preferred cheese)
- 1/2 cup cream cheese (softened)
- 1/4 cup heavy cream
- 1/4 cup chicken broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil (or butter)
- 1/2 cup grated Parmesan cheese (optional, for topping)
Instructions:
- Preheat the oven to 375°F (190°C).
- Cook the chicken: If you’re using raw chicken, cook it first. You can sauté, grill, or bake it. Once cooked, shred or dice it into small pieces.
- Steam the broccoli: Steam or blanch the broccoli florets until tender but still crisp. Drain well and set aside.
- Prepare the casserole mixture: In a medium pan, heat olive oil (or butter) over medium heat. Add the cream cheese, heavy cream, and chicken broth. Stir until the cream cheese melts and the mixture becomes smooth.
- Add seasonings: Stir in the garlic powder, onion powder, salt, and pepper. Taste and adjust seasoning if needed.
- Combine chicken and broccoli: In a large mixing bowl, combine the cooked chicken, steamed broccoli, and the cream sauce mixture. Mix well to coat the chicken and broccoli with the sauce.
- Transfer to a casserole dish: Pour the chicken and broccoli mixture into a greased 9×9-inch (or similar) casserole dish.
- Top with cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole. If you like, sprinkle the grated Parmesan cheese for an extra cheesy, golden top.
- Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, until the cheese is melted and bubbly, and the top is golden brown.
- Serve: Remove from the oven and let it cool for a few minutes before serving.
