Keto Chicken Cheese Broccoli Casserole

Ingredients:

  • 2 cups cooked chicken (shredded or diced)
  • 4 cups broccoli florets (steamed or blanched)
  • 1 1/2 cups shredded cheddar cheese (or your preferred cheese)
  • 1/2 cup cream cheese (softened)
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (or butter)
  • 1/2 cup grated Parmesan cheese (optional, for topping)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the chicken: If you’re using raw chicken, cook it first. You can sauté, grill, or bake it. Once cooked, shred or dice it into small pieces.
  3. Steam the broccoli: Steam or blanch the broccoli florets until tender but still crisp. Drain well and set aside.
  4. Prepare the casserole mixture: In a medium pan, heat olive oil (or butter) over medium heat. Add the cream cheese, heavy cream, and chicken broth. Stir until the cream cheese melts and the mixture becomes smooth.
  5. Add seasonings: Stir in the garlic powder, onion powder, salt, and pepper. Taste and adjust seasoning if needed.
  6. Combine chicken and broccoli: In a large mixing bowl, combine the cooked chicken, steamed broccoli, and the cream sauce mixture. Mix well to coat the chicken and broccoli with the sauce.
  7. Transfer to a casserole dish: Pour the chicken and broccoli mixture into a greased 9×9-inch (or similar) casserole dish.
  8. Top with cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole. If you like, sprinkle the grated Parmesan cheese for an extra cheesy, golden top.
  9. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, until the cheese is melted and bubbly, and the top is golden brown.
  10. Serve: Remove from the oven and let it cool for a few minutes before serving.
