red lentil and pepper sauce

Ingredients
Glug of oil
1 white onion – finely diced
6 cloves of garlic – crushed. You can use more or less depending on taste
2 peppers diced, I used 1 red and 1 yellow, but whatever you have will be fine
2 tsp cinnamon
2 tbs mixed herbs – I used an Italian mix, but any will do
2 tbs cider vinegar
1 400g tin chopped tomatoes
200g red lentils – give them a good rinse under the tap. No need to soak a they cook quickly.
300ml veg stock or water
Salt and pepper according to taste
In a large pan heat oil now add onion and fry until translucent, add garlic, cinnamon and peppers, and cook for a few more mins. Add herbs and vingar give everything a good stir. Add rest of ingredients bring to boil place lid and set slow cooker to 6 hour setting. If you don’t have a slow cooker bring everything to boil place lid turn down the heat and simmer for at least 40 mins.
Serve with spaghetti or carb of choice 😋
You should get about 4 large portions 😀
