Mix feta cheese, mozzarella cheese, and Greek yogurt in a bowl. Blend them together until well combined.
Transfer the mixture to a separate bowl. Add Italian seasoning (or other seasonings. You can also use just salt and black pepper). Mix well.
Heat a non-stick pan over medium heat.
Place 1 teaspoon of the cheese mixture onto the heated pan. Use the back of a spoon to spread it into a circular shape.
When the edges start to brown – flip the cheese crisp. Cook for a few more seconds, then remove and drape over a wire rack. Repeat with the remaining mixture.
