VEGAN PEANUT BROWNIES


INGREDIENTS:
1 cup all-purpose flour
1 cup cocoa powder
1 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup unsweetened applesauce
1/2 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 cup chopped lightly-salted peanuts
INSTRUCTIONS:
Preheat your oven to 350°F (175°C). Grease and line a square baking dish with parchment paper.
In a large mixing bowl, sift together the flour, cocoa powder, baking powder, and salt.
In another bowl, whisk together the granulated sugar, brown sugar, applesauce, melted coconut oil, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
Fold in the chopped peanuts, reserving a few for topping if desired.
Pour the batter into the prepared baking dish, spreading it out evenly.
Bake in the preheated oven for 25-30 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs.
Remove from the oven and allow to cool completely in the pan before slicing into squares.
Optionally, sprinkle the remaining chopped peanuts over the top before serving.
