Keto Peach Cobbler

Ingredients

For the Filling:

  • 4 cups fresh or frozen peach slices (without added sugar)
  • 1/4 cup granulated keto sweetener (like erythritol, monk fruit, or allulose)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1 tbsp lemon juice
  • 1/4 cup water

For the Topping:

  • 1 1/4 cups almond flour
  • 2 tbsp coconut flour
  • 1/4 cup granulated keto sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup butter (melted)
  • 1 large egg
  • 1/2 tsp vanilla extract
  • Optional: 1/2 tsp cinnamon for extra flavor

Instructions

1. Prepare the Peach Filling:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, add the peach slices, sweetener, vanilla extract, cinnamon, nutmeg, lemon juice, and water.
  3. Heat over medium heat until the peaches soften (about 5-7 minutes).
  4. Pour the peach filling into an 8×8-inch baking dish or a similarly sized oven-safe dish.

2. Prepare the Cobbler Topping:

  1. In a medium bowl, whisk together almond flour, coconut flour, keto sweetener, baking powder, salt, and optional cinnamon.
  2. Add the melted butter, egg, and vanilla extract. Stir until a thick dough forms.
  3. Drop spoonfuls of the dough over the peach filling, spreading it out as evenly as possible. It’s okay if it doesn’t cover everything completely; it will spread slightly while baking.

3. Bake the Cobbler:

  1. Bake the cobbler in the preheated oven for 25-30 minutes or until the topping is golden brown and firm to the touch.
  2. Let the cobbler cool for about 10 minutes before serving.

Tips:

  • You can add a dollop of sugar-free whipped cream or a scoop of keto-friendly ice cream on top for extra indulgence.
  • If fresh peaches aren’t available, you can use frozen ones as long as they’re unsweetened.
