KETO BLUEBERRY LEMON CAKE

Ingredients:

For the Cake:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 cup unsweetened coconut flakes (optional)
  • 1/2 cup erythritol (or preferred keto sweetener)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1/2 cup unsweetened almond milk (or any low-carb milk alternative)
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)

For the Lemon Glaze:

  • 1/4 cup powdered erythritol (or powdered keto sweetener)
  • 2 tbsp lemon juice
  • 1 tsp lemon zest (optional)

Instructions:

1. Prepare the Oven:

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

2. Mix the Dry Ingredients:

In a large mixing bowl, combine the almond flour, coconut flour, unsweetened coconut flakes (if using), erythritol, baking powder, baking soda, and salt. Mix until well combined.

3. Mix the Wet Ingredients:

In another bowl, whisk together the melted butter, eggs, almond milk, vanilla extract, lemon zest, and lemon juice.

4. Combine Wet and Dry Ingredients:

Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms. Be careful not to overmix.

5. Add the Blueberries:

Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

6. Bake the Cake:

Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

7. Cool the Cake:

Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

8. Prepare the Lemon Glaze:

In a small bowl, whisk together the powdered erythritol and lemon juice until smooth. If you like, add a bit of lemon zest for extra flavor.

9. Glaze the Cake:

Once the cake is completely cool, drizzle the lemon glaze over the top. Let the glaze set before slicing.

10. Serve:
