- 1 cup almond flour
- 2 large eggs

- 1/4 teaspoon salt
- 1 tablespoon olive oil or melted butter (optional, for added richness)

Instructions:
- Prepare the Dough:
- In a medium bowl, whisk together the almond flour, baking powder (if using), and salt.
- Beat the eggs in a separate bowl and then mix them into the dry ingredients until well combined.
- If using, mix in the olive oil or melted butter.
- Roll Out the Dough:
- Place the dough between two sheets of parchment paper. Use a rolling pin to roll the dough out to about 1/8-inch thickness.
- If the dough is too sticky, you can lightly dust it with more almond flour or use a rolling pin cover to help with the sticking.
- Cut the Noodles:
- Remove the top parchment paper and use a knife or a pizza cutter to cut the dough into noodle-like strips. You can make them as wide or narrow as you like.
- Cook the Noodles:
- Bring a large pot of salted water to a boil.
- Carefully drop the noodle strips into the boiling water. Cook for 2-3 minutes, or until the noodles are tender but still have a bit of bite to them.
- Be cautious not to overcook them, as they can become mushy.
- Drain and Serve:
- Drain the noodles in a colander and rinse briefly with cold water to stop the cooking process.
- Serve them with your favorite keto-friendly sauce or in a stir-fry.
Tips:
- For a different texture, you can experiment with adding a bit of psyllium husk powder to the dough, which can help make the noodles more elastic.
- If you have any issues with the dough being too sticky, chill it in the refrigerator for a few minutes before rolling it out.
