Keto Chocolate Roll Cake 

Ingredients

For the Cake:

  • 4 large eggs
  • 1/4 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol or another keto-friendly sweetener
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract

  • 1 cup heavy cream
  • 2 tbsp erythritol or another keto-friendly sweetener
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 10×15-inch baking sheet with parchment paper and lightly grease it.
  2. Prepare the Cake Batter:
    • In a large bowl, separate the egg whites from the yolks.
    • Beat the egg whites until stiff peaks form using an electric mixer or stand mixer.
    • In another bowl, whisk together the egg yolks and erythritol until light and fluffy.
    • Add the melted butter and vanilla extract to the yolk mixture, and mix well.
    • In a separate bowl, combine almond flour, cocoa powder, baking powder, and salt.
    • Gently fold the dry ingredients into the yolk mixture.
    • Carefully fold the beaten egg whites into the batter until fully combined, trying to retain as much air as possible.
  3. Bake the Cake:
    • Pour the batter onto the prepared baking sheet and spread it evenly.
    • Bake for 10-12 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
  4. Cool the Cake:
    • Remove from the oven and let it cool in the pan for a few minutes.
    • Place a clean kitchen towel on a flat surface and dust it lightly with cocoa powder.
    • Carefully turn the cake out onto the towel, remove the parchment paper, and let it cool completely.
  5. Prepare the Filling:
    • In a medium bowl, whip the heavy cream with the erythritol and vanilla extract until stiff peaks form.
  6. Assemble the Roll Cake:
    • Once the cake is completely cool, spread the whipped cream filling evenly over the cake.
    • Starting at one end, carefully roll the cake using the towel to help you shape it into a tight roll.
    • Transfer the rolled cake to a serving platter.
  7. Serve:
    • Chill the cake in the refrigerator for at least 30 minutes before slicing.
    • Optionally, dust with a little more cocoa powder before serving.
