Keto Chocolate Roll Cake
Ingredients
For the Cake:
- 4 large eggs
- 1/4 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol or another keto-friendly sweetener
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 10×15-inch baking sheet with parchment paper and lightly grease it.
- Prepare the Cake Batter:
- In a large bowl, separate the egg whites from the yolks.
- Beat the egg whites until stiff peaks form using an electric mixer or stand mixer.
- In another bowl, whisk together the egg yolks and erythritol until light and fluffy.
- Add the melted butter and vanilla extract to the yolk mixture, and mix well.
- In a separate bowl, combine almond flour, cocoa powder, baking powder, and salt.
- Gently fold the dry ingredients into the yolk mixture.
- Carefully fold the beaten egg whites into the batter until fully combined, trying to retain as much air as possible.
- Bake the Cake:
- Pour the batter onto the prepared baking sheet and spread it evenly.
- Bake for 10-12 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
- Cool the Cake:
- Remove from the oven and let it cool in the pan for a few minutes.
- Place a clean kitchen towel on a flat surface and dust it lightly with cocoa powder.
- Carefully turn the cake out onto the towel, remove the parchment paper, and let it cool completely.
- Prepare the Filling:
- In a medium bowl, whip the heavy cream with the erythritol and vanilla extract until stiff peaks form.
- Assemble the Roll Cake:
- Once the cake is completely cool, spread the whipped cream filling evenly over the cake.
- Starting at one end, carefully roll the cake using the towel to help you shape it into a tight roll.
- Transfer the rolled cake to a serving platter.
- Serve:
- Chill the cake in the refrigerator for at least 30 minutes before slicing.
- Optionally, dust with a little more cocoa powder before serving.
