Keto Garlic Bread

Ingredients:

  • 2 cups shredded mozzarella cheese
  • 2 oz cream cheese (about 1/4 cup)
  • 1 1/2 cups almond flour
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon dried oregano (optional)
  • 1/2 teaspoon dried parsley (optional)
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter, melted

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Melt Cheese: In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the mixture is melted and smooth. You can also melt the cheese mixture in a saucepan over low heat if you prefer.
  3. Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, baking powder, Parmesan cheese, and optional dried oregano and parsley. Mix well.
  4. Combine Ingredients: Add the melted cheese mixture and eggs to the dry ingredients. Stir until well combined. You should have a thick, dough-like consistency.
  5. Shape the Dough: Transfer the dough onto the prepared baking sheet. Use your hands or a spatula to shape the dough into a rectangle, about 1/2 inch thick. Smooth the top with a spatula.
  6. Bake the Base: Bake the dough in the preheated oven for 10-12 minutes, or until it’s golden and firm to the touch.
  7. Prepare Garlic Butter: While the base is baking, melt the butter in a small bowl and mix in the minced garlic.
  8. Add Garlic Butter: After baking the base, remove it from the oven. Brush the melted garlic butter evenly over the top of the bread.
  9. Bake Again: Return the bread to the oven and bake for an additional 5-7 minutes, or until the top is bubbly and slightly crisped.
  10. Cool and Slice: Allow the garlic bread to cool slightly before slicing into pieces. This makes it easier to cut and helps the texture set.
  11. Serve: Serve warm and enjoy as a side with your favorite keto-friendly dishes!

  • Add Toppings: Feel free to add extra toppings like shredded cheese or fresh herbs before the final baking for extra flavor.
