Lemon Blueberry Loaf

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup erythritol or sweetener of choice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/3 cup almond milk (or any milk of your choice)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions:

  1. Preparation:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. Dry Ingredients:
    • In a large bowl, whisk together almond flour, coconut flour, sweetener, baking powder, baking soda, and salt.
  3. Wet Ingredients:
    • In another bowl, beat the eggs. Add melted butter, almond milk, lemon zest, lemon juice, and vanilla extract. Mix well.
  4. Combine:
    • Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Blueberries:
    • Gently fold in the blueberries.
  6. Bake:
    • Pour the batter into the prepared loaf pan.
    • Smooth the top with a spatula.
    • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cooling:
    • Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Serve:
    • Once cooled, slice and serve.
