Lemon Blueberry Loaf
Ingredients:
- 1 1/2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup erythritol or sweetener of choice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup unsalted butter, melted
- 1/3 cup almond milk (or any milk of your choice)
- Zest of 1 lemon
- Juice of 1 lemon
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions:
- Preparation:
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan or line it with parchment paper.
- Dry Ingredients:
- In a large bowl, whisk together almond flour, coconut flour, sweetener, baking powder, baking soda, and salt.
- Wet Ingredients:
- In another bowl, beat the eggs. Add melted butter, almond milk, lemon zest, lemon juice, and vanilla extract. Mix well.
- Combine:
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Blueberries:
- Gently fold in the blueberries.
- Bake:
- Pour the batter into the prepared loaf pan.
- Smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Cooling:
- Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve:
- Once cooled, slice and serve.
