Weight Watchers Baked Sweet and Sour Chicken

Ingredients:

For the Chicken:

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cornstarch
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Cooking spray

For the Sweet and Sour Sauce:

  • 1 cup pineapple juice (unsweetened)
  • 1/4 cup rice vinegar
  • 1/4 cup reduced-sodium soy sauce
  • 1/2 cup ketchup
  • 1/3 cup granulated sugar or a sugar substitute
  • 2 tablespoons cornstarch
  • 1 bell pepper, cut into chunks
  • 1 cup pineapple chunks (fresh or canned, drained)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In one bowl, season the chicken pieces with salt and pepper. In a separate bowl, coat the chicken pieces with cornstarch, then dip them into beaten eggs.
  3. Place the coated chicken on a baking sheet lined with parchment paper. Lightly spray the chicken with cooking spray.
  4. Bake the chicken in the preheated oven for about 20-25 minutes or until golden brown and cooked through.
  5. While the chicken is baking, prepare the sweet and sour sauce. In a saucepan, combine pineapple juice, rice vinegar, soy sauce, ketchup, sugar, and cornstarch. Cook over medium heat, stirring constantly until the sauce thickens.
  6. In a large skillet, sauté the bell pepper chunks until slightly tender.
  7. Add the pineapple chunks to the skillet and pour the sweet and sour sauce over the vegetables. Stir to combine.
  8. Once the chicken is done baking, add it to the skillet with the sweet and sour sauce and vegetables. Toss until the chicken is well coated.
  9. Serve the Weight Watchers Baked Sweet and Sour Chicken over brown rice or cauliflower rice if you prefer a lower-carb option
