VEGAN CAULIFLOWER TATER TOTS
Ingredients:
- 1 small head of cauliflower, cut into florets
- 1/4 cup bread crumbs (ensure they are vegan)
- 1/4 cup nutritional yeast
- 1/4 cup finely chopped fresh parsley
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Olive oil (for brushing)
- Ketchup or your favorite dipping sauce (for serving)
- Instructions:
- 1. Steam the Cauliflower:
- Place the cauliflower florets in a steamer or a microwave-safe dish. Steam them until they are tender but not mushy. This usually takes about 5-7 minutes. Once steamed, allow them to cool for a few minutes.
- 2. Mash the Cauliflower:
- Place the steamed cauliflower in a clean kitchen towel and squeeze out any excess moisture. Then, mash the cauliflower in a large mixing bowl until it’s a relatively smooth consistency.
- 3. Add Ingredients:
- To the mashed cauliflower, add the bread crumbs, nutritional yeast, chopped parsley, minced onion, minced garlic, paprika, and season with salt and pepper. Mix well until all the ingredients are combined.
- 4. Form Tater Tots:
- Take a small portion of the mixture and shape it into a tot, similar to a small cylinder or oval. Repeat this process until you’ve used up all the mixture.
- 5. Preheat the Oven:
- Preheat your oven to 425°F (220°C).
- 6. Bake the Tater Tots:
- Place the tater tots on a baking sheet lined with parchment paper. Lightly brush them with olive oil. Bake for about 20-25 minutes or until they are golden brown and crispy.
- 7. Serve:
- Serve your Vegan Cauliflower Tater Tots hot with ketchup or your favorite dipping sauce.
