Weight Watchers Low-Carb Egg Loaf

Ingredients:
- 6 large eggs
- 4 oz reduced-fat cream cheese, softened
- 1 teaspoon baking powder
- Optional: Sweetener (such as stevia or erythritol) to taste
- Optional: Vanilla extract or cinnamon for flavor (adjust based on preference)
- Cooking spray
Instructions:
- Preheat your oven to 350°F (175°C). Prepare a loaf pan by lightly greasing it with cooking spray.
- In a mixing bowl, combine the eggs, softened cream cheese, and baking powder.
- If desired, add a sweetener of your choice, such as stevia or erythritol, to taste. You can also add a splash of vanilla extract or a sprinkle of cinnamon for flavor variation.
- Mix all the ingredients together until well combined and smooth.
- Pour the mixture into the prepared loaf pan.
- Bake in the preheated oven for about 25-30 minutes or until the loaf is set and lightly golden on top. You can check for doneness by inserting a toothpick into the center; if it comes out clean, it’s ready.
- Once done, remove the egg loaf from the oven and let it cool for a few minutes before slicing.
