Weight Watchers Cheesecake Recipe

Ingredients:

For the Crust:

  • 1 cup graham cracker crumbs (about 8 sheets)
  • 3 tablespoons melted butter
  • 1 tablespoon sugar (optional)

For the Filling:

  • 3 cups fat-free Greek yogurt
  • 3 large eggs
  • 1 cup granulated sugar or sugar substitute (adjust to taste)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons all-purpose flour

Instructions:

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar (if using) until well combined.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan to form the crust. You can use the back of a spoon to compact it.
  4. In a large mixing bowl, combine Greek yogurt, eggs, sugar (or sugar substitute), vanilla extract, lemon zest, and flour. Mix until smooth and well combined.
  5. Pour the filling over the crust in the springform pan.
  6. Bake in the preheated oven for about 45-50 minutes or until the center is set and the top is lightly browned.
  7. Allow the cheesecake to cool in the oven with the door ajar for about 1 hour. Then, transfer it to the refrigerator and chill for at least 4 hours or overnight.
  8. Once the cheesecake is thoroughly chilled, run a knife around the edges of the pan before releasing the sides of the springform.
  9. Slice and serve the cheesecake, optionally garnishing with fresh fruit or a dollop of whipped cream.
