Weight Watchers Cheesecake Recipe
Ingredients:
For the Crust:
- 1 cup graham cracker crumbs (about 8 sheets)
- 3 tablespoons melted butter
- 1 tablespoon sugar (optional)
For the Filling:
- 3 cups fat-free Greek yogurt
- 3 large eggs
- 1 cup granulated sugar or sugar substitute (adjust to taste)
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 2 tablespoons all-purpose flour
Instructions:
- Preheat your oven to 325°F (163°C).
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar (if using) until well combined.
- Press the crumb mixture into the bottom of a 9-inch springform pan to form the crust. You can use the back of a spoon to compact it.
- In a large mixing bowl, combine Greek yogurt, eggs, sugar (or sugar substitute), vanilla extract, lemon zest, and flour. Mix until smooth and well combined.
- Pour the filling over the crust in the springform pan.
- Bake in the preheated oven for about 45-50 minutes or until the center is set and the top is lightly browned.
- Allow the cheesecake to cool in the oven with the door ajar for about 1 hour. Then, transfer it to the refrigerator and chill for at least 4 hours or overnight.
- Once the cheesecake is thoroughly chilled, run a knife around the edges of the pan before releasing the sides of the springform.
- Slice and serve the cheesecake, optionally garnishing with fresh fruit or a dollop of whipped cream.
