Weight Watchers Crock Pot Chicken and Dumplings

Weight Watchers Crock Pot Chicken and Dumplings
Ingredients:
- 2 lbs boneless, skinless chicken breast
- 3 1/2 cups chicken broth
- Medium onion, chopped
- 2-3 stalks of celery, chopped
- 2 cans low-fat cream of chicken soup
- 1/4-1/2 tsp granulated garlic
- 1 tsp sage
- pepper to taste
- 12 oz bag of frozen mixed vegetables (should be defrosted)
- 1 cup self-rising flour
- 1 cup fat-free plain Greek yogurt
- 1 Tbsp fresh parsley
Instructions:
- Add the chicken broth, soups, and seasoning to the crockpot and stir.
- Add in onion and celery and stir.
- Place chicken breast in and cook on high for about 4 hours or until the chicken is cooked and tender.
- For the dumplings, mix the flour, yogurt and parsley together until a soft dough forms.
- Knead the dough for about 5 minutes.
- Once the chicken is cooked, remove it from the crockpot and shred it, return it to the crock pot.
- Add in mixed veggies and stir.
- Drop the dumpling dough in by about 1-2 tsp-sized balls.
- Cover and cook for an additional hour on high until the dumplings are cooked.
