Ingredients:
For the Brownie Cake:
- 150g dark chocolate (70% cocoa or higher)
- 2 tablespoons cocoa powder (unsweetened)
- 1/2 cup unsweetened applesauce
- 1/4 cup granulated Stevia or another sugar substitute
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole wheat flour
- A pinch of salt
For the Cookie Dough Layer:
- 1/4 cup unsalted butter, softened
- 2 tablespoons granulated Stevia or another sugar substitute
- 1 teaspoon vanilla extract
- 1/2 cup almond flour
- A pinch of salt
- 1/4 cup sugar-free chocolate chips
Instructions:
- Preheat your oven to 180°C (350°F). Grease and line a round cake tin with parchment paper.
- In a microwave-safe bowl, melt the dark chocolate in 30-second intervals until it’s smooth and melted. Stir in the unsweetened applesauce.
- Add the granulated Stevia or your chosen sugar substitute to the chocolate mixture and stir until well combined.
- Beat in the eggs and vanilla extract.
- Gently fold in the whole wheat flour and cocoa powder. Add a pinch of salt and mix until you have a smooth batter.
- In a separate bowl, prepare the cookie dough layer. Cream together the softened butter, granulated Stevia, and vanilla extract until smooth. Gradually mix in the almond flour and a pinch of salt until just combined. Fold in the sugar-free chocolate chips.
- Pour half of the brownie cake batter into the prepared cake tin. Spread the cookie dough layer evenly over the batter. Then, pour the remaining brownie batter on top.
- Bake in the preheated oven for about 20-25 minutes or until the edges are set but the center is still slightly gooey. Keep a close eye on it as baking times may vary.
- Once baked, remove the cake from the oven and let it cool in the tin for a while before transferring it to a wire rack to cool completely.
