4 Ingredient Weight Watchers Breakfast Casserole Recipe

These days it seems like everyone is back on the Weight Watchers wagon. While I don’t attend meetings anymore, it’s a plan that I do swear by. Because it works. Ten years ago the program helped me to lose almost 50 lbs. and it taught me the steps I needed to do it again. Something to always keep in mind are morning meals. If you are tracking your points (or calories) then a really good Weight Watchers breakfast casserole recipe is one that you definitely want to keep in your back pocket for those busy mornings.

While I’m not currently on the Weight Watchers diet plan, I’m a firm believer that it’s a program that can work for anyone, because there’s seriously a meal plan option that can work for everyone. It’s a sausage and egg casserole that you will not find in any Weight Watchers cookbooks because I made this ww breakfast recipe!

There are so many delicious weight watchers recipes out there. When it comes to breakfast, casserole recipes are definitely my go to. Casseroles just makes meal prep so much easier. I do think that I want to try this recipe out in the Instant Pot, too. That would be even easier and quicker!

The best part about this recipe is it’s so easy to make and it doesn’t take a lot of time to prepare. A recipe with little preparation time is always a win in my book. Plus, it’s low in ww points and gluten free. A recipe that the whole family will enjoy.

Weight Watchers has went through some changes over the years. The ww app, smart points, freestyle points, purple plan, blue plan and green plan… Depending on which points system you are using, this recipe is going to be 4, 5 or 7 points per serving.

Ingredients

  • 9 turkey sausage links (Canadian bacon, turkey bacon or classic bacon if you prefer, but just remember that the weight watchers points will change.)
  • 5 whole eggs (you can also use egg whites to yield even fewer points)
  • 1 cup skim milk
  • 1 cup reduced fat cheddar cheese
  • optional: a pinch of salt, black pepper or garlic powder for added flavoring

Step 1: Preheat oven to 350 degrees F.

Step 2: Cook up sausage links on the stove in a frying pan.

Step 3: Cut cooked sausage links into slices or if you prefer you can make turkey sausage crumbles.

Step 4: Combine eggs and milk in a medium to large mixing bowl. You can either blend with a mixer or whisk eggs and milk together.

Step 5: Spray 9×9 casserole dish with nonstick cooking pray. (Or you can use a light amount of olive oil if you prefer instead of the nonstick spray.)

I love using this vintage small ceramic dish. It was my Nana’s so it makes me smile every time I bake with it.

Step 6: Pour mixture into baking dish.

Step 7: Add sausage pieces and cheese.

Step 8: Bake at 350 degrees for 50 minutes or until you notice that the center has set and comes out clean with a toothpick. For the last 5 minutes sprinkle some cheese on top.

Want to make this recipe even more flavorful? You can always change it up a bit by adding vegetables. I mean those are zero points! Here are just a few ideas of which vegetables would taste great in this sausage and egg casserole:

  • green onions
  • hash browns
  • bell peppers
  • red onion
  • mushrooms
  • green pepper
  • butternut squash
