Weight Watchers Cinnamon Roll Bread
IngredientsFor the bread:

  • 1 cup almond flour
  • ½ cup powdered erythritol
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ¾ cup shredded fat free mozzarella
  • ½ cup fat free cream cheese
  • 1 egg
  • 1 teaspoon cinnamon

For the Icing:

  • 2 ounces fat free cream cheese, softened
  • ¼ cup powdered erythritol
  • 1 tablespoon heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Line a loaf pan with parchment.
  2. Combine the mozzarella and cream cheese in a heat-proof bowl. Microwave in 30-second intervals until fully melted.
  3. Whisk in the egg into the cheese mixture.
  4. In a separate bowl, whisk together almond flour, cinnamon powder, powdered erythritol, baking powder, and salt. Blend the dry ingredients into the cheese mixture.
  5. Pour batter into the loaf pan and bake for 30 minutes at 325F. Take loaf out of the oven and allow to cool before topping with prepared icing.
  6. While the bread is cooling, blend all ingredients for the icing together in a bowl.
  7. Frost bread, slice and serve.
