Weight Watchers Cinnamon Roll Bread
IngredientsFor the bread:
- 1 cup almond flour
- ½ cup powdered erythritol
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ¾ cup shredded fat free mozzarella
- ½ cup fat free cream cheese
- 1 egg
- 1 teaspoon cinnamon
For the Icing:
- 2 ounces fat free cream cheese, softened
- ¼ cup powdered erythritol
- 1 tablespoon heavy cream
- 1 teaspoon vanilla extract
Instructions
- Line a loaf pan with parchment.
- Combine the mozzarella and cream cheese in a heat-proof bowl. Microwave in 30-second intervals until fully melted.
- Whisk in the egg into the cheese mixture.
- In a separate bowl, whisk together almond flour, cinnamon powder, powdered erythritol, baking powder, and salt. Blend the dry ingredients into the cheese mixture.
- Pour batter into the loaf pan and bake for 30 minutes at 325F. Take loaf out of the oven and allow to cool before topping with prepared icing.
- While the bread is cooling, blend all ingredients for the icing together in a bowl.
- Frost bread, slice and serve.
