1 Point Protein Muffins

Ingredients:

  • 1 cup self-rising flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain Greek yogurt
  • 1/4 cup unsweetened almond milk (or any milk of your choice)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar substitute (adjust to taste)
  • Pinch of salt
  • Optional: Berries, nuts, or dark chocolate chips for added flavor (adjust points accordingly)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare Muffin Pan:
    • Line a muffin tin with paper liners or grease each cup with cooking spray.
  3. Combine Dry Ingredients:
    • In a mixing bowl, whisk together the self-rising flour, vanilla protein powder, and a pinch of salt.
  4. Combine Wet Ingredients:
    • In another bowl, whisk together the applesauce, Greek yogurt, almond milk, eggs, vanilla extract, and sugar substitute until well combined.
  5. Mix Batter:
