1-Point dinner!

I start by boiling water for my egg; I like my egg and chicken to be hot. I always have 4-ounce packages of cubed, grilled chicken in the freezer (grilled chicken I keep all of my other salad ingredients in one drawer in the refrigerator (except the tomatoes…on the counter). I even keep my vegetable peeler and egg slicer in the drawer. I carry the entire drawer to the counter…take everything out that I plan to include in my salad. As I use it, I put it back in the drawer. While the egg is boiling (12 minutes, once the water starts boiling), I cut the other ingredients. I microwave the chicken 90 seconds from frozen.

21 Minute 1-Point Salad

Romaine Lettuce
1 (yellow) mini sweet pepper, diced
Cucumber, diced
1 baby carrot, sliced
1 mushroom, sliced
Garbanzo beans
7 grape tomatoes, sliced
2 black olives, sliced
2 green olives, sliced
Shoestring beets
113g fat free cottage cheese
4 ounces grilled chicken, cubed
hard-boiled egg, chopped
19g Kraft Lite Ranch dressing (1)
