0 point strawberry ice cream recipe

Ingredients:

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup unsweetened almond milk (or any low-calorie milk of your choice)
  • 1/2 teaspoon vanilla extract
  • Sweetener to taste (like stevia, erythritol, or your choice, depending on your preference)
  • 1/2 cup non-fat Greek yogurt (optional for creaminess)
  • A pinch of salt

Instructions:

  1. Prepare the Strawberries:
    • Blend the strawberries in a food processor or blender until smooth.
    • If you like bits of strawberry in your ice cream, pulse them lightly to leave some chunks.
  2. Mix the Ingredients:
    • In a bowl, combine the strawberry puree, almond milk, vanilla extract, sweetener, and a pinch of salt.
    • If you’re using Greek yogurt, add it here for extra creaminess.
  3. Chill the Mixture:
    • Place the mixture in the fridge for about 30 minutes to chill.
  4. Freeze:
    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
    • If you don’t have an ice cream maker, simply pour the mixture into a shallow dish, cover it, and freeze. Stir every 30 minutes for the first 2-3 hours to break up any ice crystals and get a smooth texture.
  5. Serve:
    • Once it’s frozen to your desired consistency, scoop and serve!
