Ingredients:
- 2 cups fresh strawberries, hulled and sliced
- 1 cup unsweetened almond milk (or any low-calorie milk of your choice)
- 1/2 teaspoon vanilla extract
- Sweetener to taste (like stevia, erythritol, or your choice, depending on your preference)
- 1/2 cup non-fat Greek yogurt (optional for creaminess)
- A pinch of salt
Instructions:
- Prepare the Strawberries:
- Blend the strawberries in a food processor or blender until smooth.
- If you like bits of strawberry in your ice cream, pulse them lightly to leave some chunks.
- Mix the Ingredients:
- In a bowl, combine the strawberry puree, almond milk, vanilla extract, sweetener, and a pinch of salt.
- If you’re using Greek yogurt, add it here for extra creaminess.
- Chill the Mixture:
- Place the mixture in the fridge for about 30 minutes to chill.
- Freeze:
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- If you don’t have an ice cream maker, simply pour the mixture into a shallow dish, cover it, and freeze. Stir every 30 minutes for the first 2-3 hours to break up any ice crystals and get a smooth texture.
- Serve:
- Once it’s frozen to your desired consistency, scoop and serve!
